Creamy Rabbit & White Wine Stew
Comfort food turned classy. This stew melts in your mouth and feels like a warm hug.
Ingredients:
- 1 rabbit, jointed
- Salt and pepper to taste
- 2 tbsp butter
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 cup dry white wine
- 1 cup chicken stock
- 1/2 cup heavy cream
- 1 tbsp fresh thyme
- 1 tbsp flour (optional, for thickening)
Instructions:
- Season rabbit with salt and pepper.
- Heat butter and olive oil in a heavy pot, then brown the rabbit on all sides.
- Remove meat, then sauté onion and garlic until soft.
- Deglaze with wine, scraping up browned bits, then add stock and thyme.
- Return rabbit to the pot and simmer covered for 45 minutes.
- Stir in cream and reduce until thick. Optionally, whisk in flour to thicken further.
- Serve over mashed potatoes or with crusty bread.
