      Creamy Rabbit & White Wine Stew

      Creamy Rabbit & White Wine Stew

      Comfort food turned classy. This stew melts in your mouth and feels like a warm hug.

      Ingredients:

      • 1 rabbit, jointed
      • Salt and pepper to taste
      • 2 tbsp butter
      • 1 tbsp olive oil
      • 1 onion, finely chopped
      • 2 garlic cloves, minced
      • 1 cup dry white wine
      • 1 cup chicken stock
      • 1/2 cup heavy cream
      • 1 tbsp fresh thyme
      • 1 tbsp flour (optional, for thickening)

      Instructions:

      1. Season rabbit with salt and pepper.
      2. Heat butter and olive oil in a heavy pot, then brown the rabbit on all sides.
      3. Remove meat, then sauté onion and garlic until soft.
      4. Deglaze with wine, scraping up browned bits, then add stock and thyme.
      5. Return rabbit to the pot and simmer covered for 45 minutes.
      6. Stir in cream and reduce until thick. Optionally, whisk in flour to thicken further.
      7. Serve over mashed potatoes or with crusty bread.
