      Spiced Peri-Peri Rabbit Legs

      Spiced Peri-Peri Rabbit Legs

      A fiery favourite inspired by southern African flavours. Smoky, zesty, and tender.

      Ingredients:

      • 4 rabbit legs
      • Juice of 2 lemons
      • 4 garlic cloves, minced
      • 2 tsp smoked paprika
      • 1 tsp cayenne pepper
      • 2 tbsp olive oil
      • 1 tsp salt
      • 1 tsp black pepper
      • 1 tsp peri-peri chili paste or fresh chopped chilies

      Instructions:

      1. Mix lemon juice, garlic, paprika, cayenne, olive oil, salt, pepper, and peri-peri paste into a marinade.
      2. Coat rabbit legs generously and marinate overnight in the fridge.
      3. Grill slowly over medium heat for 25-30 minutes, turning regularly to avoid burning.
      4. Baste with remaining marinade during cooking for extra heat.
      5. Serve with grilled flatbread and herbed yoghurt.
