Spiced Peri-Peri Rabbit Legs
A fiery favourite inspired by southern African flavours. Smoky, zesty, and tender.
Ingredients:
- 4 rabbit legs
- Juice of 2 lemons
- 4 garlic cloves, minced
- 2 tsp smoked paprika
- 1 tsp cayenne pepper
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp peri-peri chili paste or fresh chopped chilies
Instructions:
- Mix lemon juice, garlic, paprika, cayenne, olive oil, salt, pepper, and peri-peri paste into a marinade.
- Coat rabbit legs generously and marinate overnight in the fridge.
- Grill slowly over medium heat for 25-30 minutes, turning regularly to avoid burning.
- Baste with remaining marinade during cooking for extra heat.
- Serve with grilled flatbread and herbed yoghurt.
