      BBQ Rabbit Ribs with Sticky Tamarind Glaze

      Oh yes, rabbit ribs are a thing — and when slow-cooked, then charred over flame with a tamarind, brown sugar, and ginger glaze? Absolutely sinful.

      Serving tip: Serve with charred corn and pickled red onions.

      Description: Sweet, tangy, and deeply satisfying. The ribs fall apart with just the right amount of char.

      Ingredients:

      • 1 rack rabbit ribs
      • Salt and pepper to taste
      • 2 tbsp tamarind paste
      • 3 tbsp brown sugar
      • 1 tbsp soy sauce
      • 1 tbsp apple cider vinegar
      • 1 tsp grated ginger
      • 2 garlic cloves, minced

      Instructions:

      1. Season rabbit ribs with salt and pepper.
      2. In a saucepan, combine tamarind, brown sugar, soy sauce, vinegar, ginger, and garlic. Simmer until thick and glossy.
      3. Brush ribs with the glaze and marinate for 1-2 hours.
      4. Grill ribs over low heat for 20-25 minutes, basting with glaze and turning often.
      5. Finish on high heat for a final caramelized char.
      6. Serve with charred corn and pickled onions.
