Braai-Style Rabbit Sausages (Boerewors-Inspired)
Inspired by South African boerewors, this flavour-packed rabbit sausage is perfect for the grill.
Ingredients:
- 500g rabbit meat, ground
- 100g pork fat
- 1 tsp coriander seeds, toasted & crushed
- 1 tsp black pepper
- 1 tsp ground nutmeg
- 1 tsp allspice
- 1 garlic clove, minced
- 1 tbsp vinegar
- Salt to taste
- Natural sausage casing (optional)
Instructions:
- Mix all ingredients thoroughly and chill for 1 hour.
- If using casing, stuff mixture into casing to form sausages.
- Grill over hot coals, turning until browned and juicy.
- Serve with pap and tomato relish or crusty rolls.
