      Braai-Style Rabbit Sausages (Boerewors-Inspired)

      Braai-Style Rabbit Sausages (Boerewors-Inspired)

      Inspired by South African boerewors, this flavour-packed rabbit sausage is perfect for the grill.

      Ingredients:

      • 500g rabbit meat, ground
      • 100g pork fat
      • 1 tsp coriander seeds, toasted & crushed
      • 1 tsp black pepper
      • 1 tsp ground nutmeg
      • 1 tsp allspice
      • 1 garlic clove, minced
      • 1 tbsp vinegar
      • Salt to taste
      • Natural sausage casing (optional)

      Instructions:

      1. Mix all ingredients thoroughly and chill for 1 hour.
      2. If using casing, stuff mixture into casing to form sausages.
      3. Grill over hot coals, turning until browned and juicy.
      4. Serve with pap and tomato relish or crusty rolls.
