Durban-Style Rabbit Bunny Chow
A South African street food legend gets a gourmet twist. Spicy rabbit curry tucked inside a hollowed-out loaf.
Ingredients:
- 500g rabbit, chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp ginger paste
- 1 tbsp curry powder
- 1 tsp garam masala
- 1 tsp turmeric
- 2 tomatoes, grated
- 1 cup chicken stock
- Salt and pepper to taste
- Fresh coriander to garnish
- 1 small loaf of white bread, hollowed out
Instructions:
- Sauté onion, garlic, and ginger until soft.
- Add spices and toast until fragrant.
- Stir in rabbit, coat in spices, then add tomatoes and stock.
- Simmer until meat is tender and sauce thickens (about 45 minutes).
- Spoon into the hollowed loaf, garnish with coriander, and serve.
