      Durban-Style Rabbit Bunny Chow

      Durban-Style Rabbit Bunny Chow

      A South African street food legend gets a gourmet twist. Spicy rabbit curry tucked inside a hollowed-out loaf.

      Ingredients:

      • 500g rabbit, chopped
      • 1 onion, chopped
      • 2 garlic cloves, minced
      • 1 tbsp ginger paste
      • 1 tbsp curry powder
      • 1 tsp garam masala
      • 1 tsp turmeric
      • 2 tomatoes, grated
      • 1 cup chicken stock
      • Salt and pepper to taste
      • Fresh coriander to garnish
      • 1 small loaf of white bread, hollowed out

      Instructions:

      1. Sauté onion, garlic, and ginger until soft.
      2. Add spices and toast until fragrant.
      3. Stir in rabbit, coat in spices, then add tomatoes and stock.
      4. Simmer until meat is tender and sauce thickens (about 45 minutes).
      5. Spoon into the hollowed loaf, garnish with coriander, and serve.
