Greek Lemon & Herb Rabbit Bake
Mediterranean simplicity with sun-kissed flavour. Bright, herby, and deeply satisfying.
Ingredients:
- 1 rabbit, jointed
- 3 tbsp olive oil
- Juice of 2 lemons
- 1 tbsp oregano
- 4 garlic cloves, crushed
- Salt and pepper
- Potatoes, chopped
Instructions:
- Toss rabbit and potatoes with oil, lemon, oregano, and garlic.
- Spread in a roasting pan and season.
- Roast at 180°C (350°F) for 45-60 minutes.
- Serve with tzatziki and a crisp salad.
