      Greek Lemon & Herb Rabbit Bake

      Greek Lemon & Herb Rabbit Bake

      Mediterranean simplicity with sun-kissed flavour. Bright, herby, and deeply satisfying.

      Ingredients:

      • 1 rabbit, jointed
      • 3 tbsp olive oil
      • Juice of 2 lemons
      • 1 tbsp oregano
      • 4 garlic cloves, crushed
      • Salt and pepper
      • Potatoes, chopped

      Instructions:

      1. Toss rabbit and potatoes with oil, lemon, oregano, and garlic.
      2. Spread in a roasting pan and season.
      3. Roast at 180°C (350°F) for 45-60 minutes.
      4. Serve with tzatziki and a crisp salad.
