French-Style Rabbit with Mustard Cream Sauce
Classic French countryside elegance. Delicate rabbit in a rich Dijon and white wine sauce.
Ingredients:
- 1 rabbit, jointed
- Salt and pepper
- 2 tbsp butter
- 1 onion, sliced
- 2 garlic cloves, minced
- 1/2 cup dry white wine
- 1 cup chicken stock
- 2 tbsp Dijon mustard
- 1/2 cup cream
- Fresh tarragon
Instructions:
- Season and brown rabbit in butter.
- Sauté onion and garlic until soft.
- Add wine, stock, and mustard. Return rabbit and simmer 45 minutes.
- Stir in cream and tarragon. Simmer 10 more minutes.
- Serve with buttery potatoes or green beans.
